On a marble slab runs the spatula-like tool underneath the almonds with boiling sugar and honey, thickening what we will call Torrone with the cold temperature of the marble.
In whatever way it is made (with almonds, with pistachio or with "ciciulena"), the nougat gives the air an unmistakable fragrance, to the point of becoming one of the typical smells of the days of the Agatine festivities.
